What if the alignment on the sheet doesn't match how the char is played. In my case it won't change if I keep playing as I do, as the alignment usually doesn't gets changed through non-combat RP.

Simply tell a DM why one thinks it is wrong, and then let him decide if it should be changed ?

Yeah, that's the only solution. Keep in mind that the DM in question remains free to decide when or if he's going to change your alignment. He has the right to wait for some actions that justify this change of alignment instead of changing it solely on your say so.
